Services to Students
 Students will master the following:

Basic sugar handling principles
Candy canes and lollipops
At least 18 traditional and modern fruit rock designs
Creation and manufacture of their own original fruit rock designs
26 letters for making personalized fruit rock candy
Principles for creating unique and delicious flavors
How to interact with guests in order to provide an exciting candy making experience
Equipment sourcing and kitchen layout
 
Students will be provided with the following:

Hard copy of instructional diagrams and recipes for all designs taught to the trainees
Art of Hard candy booklet
Continued consultation and advisement of up to 1hr/week for 6 months

Unit 1: Equipment, Logistics, and Best Practices (1st week) – 20 hours

Equipment setup
Intro to essential ingredients
Production rotation
Supply chain management
Costing and production analysis
Candy making Safety

Learning Outcomes

Students will be able to source, install, maintain, and repair basic candy making equipment, maintain a constant flow of production, setup and manage a supply chain, and understand and adhere to safety standards. Students will be assessed by completion of written exam as well in-kitchen labs that will be overseen by the instructor.
 
 
 
Unit 2: Basic Candy Handcrafting Techniques (2nd and 3rd weeks) – 40 hours/per week

Traditional candy canes
Novelty candy canes
Round lollipops
Molded lollipops
Pillow candies and drops
Lollipop customization
 
Learning Outcomes

Students will be able to create batches of marketable quality for all candy cane, lollipop, and drop/pillow candies and demonstrate proper techniques during execution. Students will be assessed by in-kitchen labs that will be overseen by the instructor.
 
  
 
Unit 3: Advanced Candy Handcrafting Techniques (3rd and 4th weeks) – 40 hours/per week

Traditional fruit rock designs
Modern fruit rock designs
Japanese style rock designs
Letter rock and advanced symbols
 
Learning Outcomes

Students will be able to create batches of marketable quality for all cut rock candies and demonstrate proper techniques during execution. Students will be assessed by in-kitchen labs that will be overseen by the instructor.
 
Unit 4: Custom Candy Techniques (5th and 6th weeks) – 40 hours/per week

Learning Outcomes
Students will be able to work with customers to design custom candy solution in any hard boiled sugar style and create customized batches candies at the quality level expected by the wedding, corporate, event, and wholesale industries. Students will be assessed by in-kitchen labs that will be overseen by the instructor.
 
 
 
Unit 5: Hands-on Training (7th - 18th Week) 200 hours

Students will practice all the skills that they have learned in the previous weeks
 
Learning Outcomes

Students will demonstrate competency in all areas of candy making in a working production kitchen.  Students finishing this course will be ready for a career in handmade artisan candy. Students will be assessed by a weekly log and skills evaluation questionnaire to be completed by the instructor.
